No Butter, No Sugar, No Problem! Homemade Blueberry Muffins

In honor of our current houseguest,  and my favorite Father-in-law, I've found all the more reason to be domestic this week and cook up some good ol' fashioned home cooked meals. Specifically on topic today, some homemade wholewheat blueberry muffins...yum. This is the third time I've whipped up these deliciously delightful breakfast treats so I figured it was high-time I write up a post for them!

I got the recipe over at FitSugar.com. It's quick, easy, and they're some of the best muffins I've made...all without the help of sugar, eggs, or white flour! You get your sweetness from the agave, maple syrup and blueberries. Those things really know how to pack a punch of a sweet candy taste straight from Mother Nature herself.






Homemade Wholewheat Blueberry Muffins

Ingredients:

1/2 cup vegetable oil
1/2 cup soy milk
1/4 cup pure maple syrup
1/4 cup light agave nectar
2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
2 1/2 cups fresh blueberries

Directions:

1. Heat oven to 375 degrees F. 

2. Line a 12-cup muffin pan with paper liners.

3. Whisk oil, soy milk, maple syrup, and agave nectar in a bowl. Combine flour, baking powder, and salt in another bowl. Stir wet ingredients into dry ingredients; fold in blueberries.

4. Divide batter evenly among muffin cups. Bake until muffins are golden brown and a knife comes out clean, 25 to 30 minutes depending on oven.

Nutritional stats per muffin: 221 calories, 10 g fat, 1 g saturated, 30 g carbs, 10 g sugar, 3 g fiber, 3 g protein

Blue Cheese Jalapeño Burgers, oh my!

College football gameday (almost) seems like an urban myth in the Pacific Northwest, or at least compared to my experience growing up in the South. But, considering this is where we will call home for the unforeseen future, Geoff and I will make the best out of our situation and bring the tailgating here! Life always tastes a little better with good food and friends to share it with ... so in honor of college football Saturday I give you the Blue Cheese Jalapeño Burgers!


(side note: if you can spot all the times I drop a subliminal picture of Auburn gear, you get a prize!) Kidding, just wanted to emphasize our love for the A-U



These burgers are probably one of the best burger recipes I've ever tried! I'm slightly obsessed! And to make them a little less guilt-ridden I usually place my burger inside a few crisp leaves of fresh lettuce. It's Mmm Mmm good! and for this post, you get 2 for the price of 1 ... that's right, 2 recipes for the low price of one blog post. :)





I based my burger recipe from a Pinterest post found on my Tasty Treats board.  The She Knows website offers a ton of different resources for a wide range of readers, one of them being yummy recipes like this one!

I followed the recipe pretty closely, however I made a few tastebud adjustments based on what I know this house likes to devour. :)

Ingredients

*Yields: 8-10 burgers of generous portions

2 pounds ground (sirloin) beef - trust me, you can tell

6 jalapeño peppers, seeded and chopped *if you don't have fresh jalapeños, you can sub with jarred pre-chopped jalapeños (I've found you can't really tell the difference)

1 cup blue cheese crumbles

1 cup gorgonzola cheese crumbles

2 tablespoons finely minced garlic *we're big fans here of garlic, so I usually double+ this

2 generous shakes of garlic powder *exact measurements not important :)

2 tablespoons soy sauce *lite

1 large egg *this helps keep your pattie intact

Your choice of cheese to top *Again, big fans of cheese here, so I'll switch it up or do 'eaters choice'
Hamburger buns *we like the Pepperidge Farm Onion Hamburger Buns
Lettuce, Onions, Tomatoes *optional

Spicy Avocado Spread *I love this recipe for a burger spread or a nice little chip n' dip combo! Click on the link to get the recipe for yourself!

Directions:

1. Mix together ingredients for the Spicy Avocado Spread. I've found it's tastier when all ingredients have marinated for at least an hour prior to consumption.

2. Combine all burger ingredients in large mixing bowl. Form your patties of desired thickness. *I've made big ol' fat ones and teeny tiny 'Steak and Shake' inspired ones.

3. Cook each burger for about 5 - 7 minutes one each side, depending on how hot your grill is. Place your choice of cheese on top until melted.

4. Place patties on your cute Auburn serving platter and enjoy! *Don't forget your Avocado Spread!

Clean Eating: Paleo Pancakes

If you're a frequent visitor of Pinterest like I am, you might've seen these pancake recipes floating around.  A healthier version of a Saturday morning ritual I had growing up? Yes, please!  I hardly ever eat them anymore, unless I'm lucky enough to be home while my mom is whipping up a batch.  Those two (or three, let's be honest) deliciously circular cakes of carbs drizzled with yummy syrup on top can pack a palatable punch, but lack the nutritional needs to last you all morning, bummer.

So, with keeping the new tradition of clean eating ... I give you the Paleo Pancakes! With just two ingredients, yes I said only two, and about 10 minutes of your time, you can enjoy a guilt-free treat on any morning of the week, or afternoon/evening for that matter!!

Yields: about 2 servings and only 250 calories for the entire batter

Ingredients:

1 (ripened) banana
2 eggs

Directions:

Just whip these together in a blender until soft ... and voila! you've make your pancake batter! Spray your skillet with cooking spray, any will do.  Turn on burner over medium-low heat. I made little mini pancakes ... the minis just seemed to have that special 'come and eat me' appeal to them.


Smile! Your about to eat clean!

Disclaimer: Be open minded ... if you're hoping for an exact replica of your favorite pancake recipe, without all the carb-loaded ingredients, you might be slightly underwhelmed. But for me, I thought they were the perfect substitute to a Saturday morning ritual! I was not dissapointed in the least with my new guilt-free clean eating recipe and will definitely be whipping up this easy recipe again!

Clean Eating - Peanut Butter Chocolate Chip Cookies

After a weekend of eating, well, junk I was feeling  inspired  compelled to try another one of my clean eating recipes!  I found this beaut' here at Texanerin Baking blog. I didn't stray from her recipe and even found her Notes to be quite helpful!

Who doesn't love feeding that sweet tooth craving in a guilt-free way?! And get this, the main ingredient... chickpeas!! Whaaaaat? I know! I love exploring all these new types of ingredients that can still make an old goodie stay an actual goodie! Even the ol' hubbs liked them! (I told him the main ingredient after they'd been taste-tested approved:)

Texanerin definitely captured a much more delectable-looking cookie then I did, but the taste was still oh-so-gooey and a must repeat!

Grain-free Peanut Butter Chocolate Chip Cookie Dough Balls


Recipe by:  | Texanerin Baking
Prep Time: 8 min • Cook Time: 10 min • Total Time: 18 min

Ingredients:
  • 1 1/4 cups canned chickpeas, well-rinsed and patted dry with a paper towel 1
  • 2 teaspoons vanilla extract
  • 1/2 cup + 2 tablespoons (165 grams) natural peanut butter, SunButter or almond butter2
  • 1/4 cup (80 grams) honey (commenters have used agave with success!) 
  • 1 teaspoon baking powder 3
  • a pinch of salt if your peanut butter doesn't have salt in it
  • 1/2 cup (90 grams) chocolate chips

Directions:
  1. Preheat your oven to 350°F / 175°C. Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they're combined.
  2. Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.
  3. With wet hands, form into 1 1/2" balls. Place onto a Silpat or a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don't do much rising. Bake for about 10 minutes.
Notes:
  1. My can of chickpeas was 400 grams, 240 grams without the water, and I used all but a few tablespoons.
  2. Don't even try with regular peanut butter! They'll come out oily. You MUST use natural peanut butter. :)
  3. If you need grain-free baking powder, you can use 1 part cream of tartar + 1 part baking soda + 2 parts arrowroot.

I love Jesus & Easter cookies!

I come from a family of tradition: home-cooked meals at the dinner table, Saturday morning pancakes or waffles, football seasons in Auburn, summers at The Lake House, but during this time of year a few other traditions in particular come to mind.  Growing up, my family and I went to church every Sunday ('but I don't feel good' I would say on tired mornings, followed by a response of 'you'll be ok, you're going').  As a youngin' I never quite understood why I had to go every Sunday, God'll understand this one time, right??  But looking back, keeping with tradition and doing things as a family was important to my parents and I'm glad they instilled that same tradition in me.  I've realized those experiences gave me the ground work to actively pursue what a relation with Christ felt like and how I would apply that to my own life, whether attending church or not. As a Christian, I personally believe Easter is the most important celebration of them all!  This day doesn't celebrate a birth or even a death because any person can achieve those in one lifetime.  Easter is a celebration remembering the resurrection of Christ, after He was crucified to His death on the cross. God's love is so infinite, His only son died on the cross, only to overcome death so that we may ultimately have a better life. "For God so loved the world that he gave his only son, that whoever believes in him shall not perish but have eternal life." John 3:16. What a beautiful miracle to believe in, have faith in, and live for! Can I get an Amen up in hur?!!!

With Easter Sunday here it reminds me of other traditions I grew up knowing.  My sisters and I always got to pick out a new Easter Sunday outfit. No matter what age, this has got to be exciting! We would get up (super) early in order to be at church for the Sunrise Service. Depending on our age, one of us was singing praises in the Youth Choir (& probably keeping the energy up for the heavy-eyed attenders ;). Following the service we would meet 'everyone' in the rose garden and take excessive amounts of family photos.  My sisters and I were lucky to grow up with a such a big group of my parents' closest friends and their children.  All around the same age, all the kids would huddle together for group shots (this started when I was just old enough to sit up by myself and still continues to this day!) It's so special to look back at these photos and see how we've all grown up, yet still find time to keep this tradition alive.  We would then head inside for 'regular' church, followed by a family lunch at either my parents house or my Aunt and Uncle's.  Everyone would bring their favorite dish (usually a good ol' Southern casserole) to contribute to the feast.

But before all of this began, even before the Sunrise Service, another tradition was made.  For as long as I can remember, my mom has always had this cake pan in the shape of a bunny.  She would 'Betty-Crocker' it right up for my sisters and me to help decorate days before Easter. I remember one year, when the 'Thong' song by Sisqo was popular (don't act like you don't remember). Poor Bunny Cake caught the brunt of the song and all it's one-hit-wonder-hype! That's right, we gave the Bunny Cake a thong bikini with musical notes playing by her head...I think there's even a picture of this still floating around somewhere? Anyway, even though we've all grown up and (some) moved away from home, my mom still gets to bake that Bunny Cake for Easter! Thankfully my oldest sister and her family live near my parents, so my cute niece and nephew are the new generation Bunny Cake makers!
Look at what a good job they did!!



Seeing this picture (sent proudly by my mom) sparked warm feelings of the traditions I grew up knowing.  It also got me thinking of how Geoff and I can create a few of our own.  That's one of the many blessings in a marriage, you're able to bring together your family traditions and create ones of your own.  I may not have a bunny cake pan, but I do have a heart full of memories and the will to create!
So, with my handy Martha Stewart decorating kit and my new Easter/Spring cookie cutters (recently snagged from Target), I'm off to create new Easter memories of my own.

Introducing mini-Bunny Cake: AKA Bunny Cookies, Cott-Style




Back during the Christmas holiday season I made a few batches of cookies to give out to a few new friends I made out here. So I picked up a Sugar Cookie mix by Betty Crocker and loved how they came out! I was skeptical at first because I was used to making the dough from scratch with my mom, but thankfully Betty got the quicker version mass-produced for those who don't really want to go the 'making it from scratch' route.


Look at Murphy, he's one of the best sous-chefs a girl could ask for. :) Always willing to help in the kitchen!

 


After the dough formed in the mixer I placed it in the fridge for about half an hour (the longer the better) to harden, this makes it a bit easier to handle during the 'kneading and cookie-cutter' portion (now that I didn't get from Betty, did I mom?;). While the dough was chilling, I prepped my area with parchment paper, AP flour, and mixed up a few different Pastels for my frosting.



I then rolled out my dough and began cuttin' 'dem cookies!  I repeated this step until all the dough was used, followed the baking directions from Betty, and waited. 8 minutes later they were a perfectly gooey golden cookie! I let them cool and then began my decorating process...



I have to say, they may not be Mrs. Bunny Cake but they suuuuure are a cute mini-version, or should I say the perfectly new Cott tradition. :)



Mmm mmm finger lickin' good!
